Ingredients

-500 grams shelled edamame (frozen is also okay after they have been thawed).
-1 tablespoon cornstarch (8 grams) or 1 tablespoon arrowroot powder (8 grams).
-1 tablespoon olive oil (15 milliliters) or 1 tablespoon unsalted butter (15 milliliters) melted.
-2 tablespoons honey (30 milliliters) preferably high quality.
-1 teaspoon Dijon mustard (5 milliliters) optional, only add if you want a tang.
-1 teaspoon herbes de Provence or 1 teaspoon thyme.
-1/2 teaspoon flaky sea salt (fleur de sel is preferred if you have it).
-Black pepper, added to your preference.
-Zest of 1 lemon (optional, only if you want to add brightness).
-A pinch of chili flakes (optional, if you want to add heat).

Preparation steps

-Preheat your oven to 200 degrees celcius or 400 degrees Fahrenheit, while your oven is heating, you should also prepare a baking sheet, placing parchment paper over the tray or find a tray that is non-stick. Using a clean towel, dry the edamame. They should not be wet if you want to make sure they will crisp properly.
-Toss the edamame with cornstarch or arrowroot until they are evenly coated with a dusting. This will create that crisp coating you are looking for.
-Add the olive oil or melted butter and toss once more in order that every pod acquires a gentle glimmer.
-Cook Until Golden Brown: Spread the edamame on a baking sheet in a single layer. Put in the preheated oven and roast for 12–16 minutes, shaking the tray once halfway through. -Combine and Serve: Immediately transfer and dump the edamame to a large bowl. Pour the warm honey glaze and toss quickly to coat all the edamame. Flaky sea salt and chili flakes can be sprinkled on top.
-Remove from the bowl and garnish for serving. Eat while it is still warm to enjoy the slight crispiness. They are most flavorful when eaten fresh, though an airtight container allows for day or two of storage.

- For an extra crunch, skip the roasting step and try pan-searing the coated edamame in a little oil for 4–6 minutes instead.
-Use maple syrup instead of honey for a different sweetness, and ideal for vegan versions.
-For a more Asian leaning version, stir in toasted sesame oil and/or sesame seeds.
-Reserve the herbes de Provence and add fresh rosemary or tarragon for an herby and citrusy punch, and squeeze fresh lime for a brighter finish.
-For a smoky flavor, add a sprinkle of smoked paprika or a few drops of liquid smoke.
